Can I plug my own microphone into iTalk Pro?

Yes, but some microphones will work better than others. The 3.5 mm input works with line level devices, meaning your best bet is a high impedance dynamic mic.

Depending on the microphone you're using, you may want to change the automatic gain control to low or high. To change this setting, press and hold the iTalk button for a few seconds and let go. A screen will appear on your iPod where you can change the gain setting from Auto to Low or High by tapping the iTalk button. Press and hold the iTalk button again for a few seconds to confirm the selection and exit the menu.

Please note that some microphones require their own separate power source (sometimes referred to as "phantom power"). To use such a mic with iTalk Pro, you may need to run the microphone into an appropriate preamp first.
